High Demand for Healthy Oil
According to the United Soybean Board’s Consumer Attitudes on Nutrition (http://www.soyconnection.com/health_nutrition/consumer_attitudes.php) survey, 85 percent of consumers view soy-based products as healthy. Many are also taking efforts to cut the trans fats, produced by hydrogenation, out of their diets. The food industry has responded by reducing or eliminating soybean oil from their products.
